Why is it I can eat a bacon and egg sandwich Brown bread and not get a spike but I ate 3 ryvita-origonal with a little corned beef for lunch and 2 hours later my sugars are around 10.5?

Time of day can have an effect.
The differences in the levels of fats and protein (which can slow down the absorption of carbs) can have an effect, too.
The total amount of carbs may be different.

Sometimes, it's just one of those things.
 
One thing you can be certain of, it’s far more complicated than just the total number of carbs on the label.
