I saw this one on a TV programme and have kept it pretty much as I saw it. It's for pepper lovers

Carluccio's peppers
Use SWEET peppers Red, orange, yellow and/or white. Green or purple tend to go bitter
2 or 3 cloves garlic crushed
Cup or so good olive oil
Deseed the peppers and cut into strips about 1cm wide
Lay in a single layer on a baking sheet
mix crushed garlic with oil and drizzle over pepper strips
Bake in hot oven until the edges blacken.
Season after cooking.
Use as an accompaniment to anything. Nice with home-made burgers.

I tend to do them the other way up, fry them in (ground nut) oil with the garlic. Also go well with some chopped streaky bacon. That combination makes a useful base which will work with fish, prawns, chicken, mushrooms etc, as a stir fry with suitable herbs and spices to match. Quick, tasty and nutritious (though some people have bad reactions to nightshades, including arthritis, and need to avoid them).

I'll try them your way tonight. Oh yeah I have some Cumberland sausages and asparagus, that'll work a treat, topped off with a suitably small number of strawberries and a glass of Shiraz.

Sounds nice. I usually fry my peppers on the hob - a good glug of olive oil over a high heat - cut into 2cm strips - turn it down when they start to brown - then add a splash of water and cook until water is evaporated (you cab also use beer for this recipe in place of water).

Bl00dy lovely with some cumberland sausages!

I got this recipe from the BBQ Pit Boys on Youtube. Fantastic recipes for Lo-Carbers...
