Carrot and coriander

I wanted to know what James Martin's recipe for carrot and coriander soup tasted like so I just made it. Bloody delicious.
 
Post the JM's recipe, love carrot and coriander soup :)
 
Ingredients
Preparation method
  1. Heat the oil in a large pan and add the onions and the carrots. Cook for 3-4 minutes until starting to soften.

  2. Stir in the ground coriander and season well. Cook for 1 minute.

  3. Add the vegetable stock and bring to the boil. Simmer until the vegetables are tender.

  4. Whizz with a hand blender or in a blender until smooth. Reheat in a clean pan, stir in the fresh coriander and serve.
 
:) This has long been my most favourite soup! It's so quick and easy to make. However, since becoming a low carb woman I'm rather wary of eating it because of the carb value of all those carrots :(. I know.....eat some and test..... but the thought of throwing it away if it spikes me is tantamount to first degree torture! :arghh:

Edit.....I always used butter to soften, it tastes better ;)
 
I never thought of testing after the soup. That's probably because there was some wine as well. The village shop has an offer on.

This dieting is hell.
 
I had a hard time finding the actual page containing James Martin's recipe but I now have done so. Be careful since he says it feeds 10-15 people.

I had an Ainsley Harriot Carrot & Rocket soup for lunch today, it was really nice but not as good as home-made soup.
 
:) Thank you for the info Squire. It's not as high in carbs as I expected. Reckon I can adjust ingredients quantity down a bit!.... Unless I start a soup kitchen ;)

I am wondering if it freezes. I do quite a lot of batch cooking but never did it to soup before. Worth a try I suppose.
 
Should do, I batch assemble soup and freeze the individual pots. Soupsicles anyone <G>
