Cauliflower Mash Recipe (Mash Potato Substitute)

Got this recipe from the book I posed about earlier. I tried making Cauli mash before and it was rubbish. Had this tonight and it's better than mashed potato!

900g Cauliflower, trimmed (basically a medium sized cauli)
60ml double cream
60g butter
30g parmesan cheese
60g cream cheese

1. Cut the cauliflower, including the core. Boil for 20-30 mins until completely tender.
2. Drain in a colander. With a bowl or small plate press on the cauliflower to drain the water. THIS IS VERY IMPORTANT or it will be too watery.
3. Put the cauli in a food processor with the cream and blend until it's completely smooth.
4. Put back in the pan on a low heat. Put in the butter, parmesan and cream cheese.

Supposedly makes 6 servings (yeah right) - I had it in two!! :lol:

Per serving (assuming it makes 6 servings, not my greedy 2!):
Carbs: 4.6 g
Protein: 5.4 g
Fat: 16.6 g
Calories: 193 kcal

You really must try this, it's going to be a staple for me!
 
Sounds bloody lovely. In the U.S they do something similar called "Loaded Cauli". They make it similar to yours, but sprinkle cheese and bacon over the top and grill it.

Sounds like something I could EASILY become addicted to! :lol:

Once I get christmas out of the way - I will certainly be giving this a whirl :thumbup:

It should be easy and quick to rustle up - me and my cooking though sometimes! :shifty:
