Cauliflower Rice



Looks thicker than 1/2cm!! Tray is quite large though. Must be about a cm thick. Its a swiss roll tray!!
 
Yesterday I had a chicken curry with cauli rice and my blood sugars went low and stayed low all day (4's and 5's). This was an effect I did not expect since I was just hoping that I didn't spike much. What a result. I shall do it again soon to confirm whether it is real or a fluke.
 
I've avoided 'substitutes' but the super lovely @debrasue and @bulkbiker have convinced me today to try cauli mash. Maybe cauli rice is next!
I honestly thought you already knew about these subs. Boy you're in for a treat. Cauli is my new potato dishes. Cannot see what I ever saw in potato, now. A starch which obstructed my weight loss for decades. I do sometimes which I could turn back time. The knowledge from this forum sometimes blows me away!
 
I totally love this forum but wish I could 'save' posts - all these amazing suggestions but I have a memory like a sieve (I am 48!) and forget how to find them
I just use search forum with 'cauli' and loads comes up. In all threads. The forum is great for me. Im searching here before google now. Then google to see if anything newer or changes. I feel so lucky to have great posters at my finger tips.
 

I knew about them, I've just avoided so I didn't feel like I was restricting myself - if that makes sense? i.e can't have rice so eating this cauli lark. Going to explore more now, especially cauli mash for those winter warmer dishes

@PenfoldAPD throw out the old eating way. You've turned a corner, don't dither. Stick to this new lifestyle now. Your diabetes needs it. You're different to potato and rice eaters. Your pancreas cannot deal with them. Throw them out with the rubbish and don't look back. Prep cauli rice so less temptation. I run out of money for brighter food choices but you don't have to. Iceland sell a bag of chips for same price as cauliflower. The boys get their potato treats and I get bags of cauliflower. Right off potato/rice, if you can. Forever...... maybe in the future they'll invent a powder to sprinkle on starchy foods so we can eat them . But for now. Kick them to the kerb. Make the decision and stick with it. I know you are more than capable.

For the most I really have done. I've explored many things I never used to eat before. And believe me potatoes, rice, pasta haven't been seen in my kitchen since January! Low carb cauli cheese is a new staple, cauli's are a quid at the moment.

Ooooooo & how long do I cook for cauliflower mash & do I add anything (like cream or butter ... she asked hopefully )

Mine is 200ml double cream heated. Grated cheddar to strength you like, melted in and poured over your chosen steamed, boiled or microwaved cauliflower.
 
Yummy, crispy bacon crumbled on top. There's a thought!
 
Chicken dopiaza cooking in the slow cooker all day ... smells wonderful
Donnellysdogs' rice just popped in the oven .... can't wait
