Cauliflower Rice

Had cauli cheese last night.. couldn't resist it with total envy of this post!!

Can't remember why I warned off cauli yet overcooked broccoli ok for me.. came from gastro chap or somebody.

The cauli cheese not home made tho... so had first cheat in prob two years plus.

Was yummy too.
 
I always have frozen cauliflower and broccoli so I can bulk up anything that looks a bit meagre, or I chop bits off a fresh one and steam them - I used to be a storage tester for Allied Lyons and it gave me an aversion to storing food - and cheesecake. I have a horror of cheesecake. It's like - PCTD -
 
I had to find a source of iron and my dr suggested overcooked broccoli everyday. I'm just one point above anaemic following the addition of broccoli... was anaemic before. So happy with this, despite having to be overcooked I must still be getting some iron from it.

Aaaaaw... cheesecake is delicious!!

iron is a mineral, so it won't be affected by the cooking which will just break down the cell walls and make the iron more accessible.

do you drink the water you cook the broccoli in? I take my hat off to you, if you do - not sure I would be able to face it - but if you drank it you would get any of the nutrients that aren't destroyed by heat, but leach out during cooking.

we microwave most of our veg, so the most I add is about a tablespoon of water, but by the end of cooking, a lot more has collected in the bowl - the liquid that comes out of the veg as they cook. I should reserve it, and add it to soups and things... but usually just tip it down the sink. Bad B.

Not after the 20th one to taste and assess it isn't - post cheesecake tasting disorder sets in - even now I flinch when I walk past the make it yourself cheesecake packets in the supermarkets.

Thanks for that info.. I really wasn't aware of that. Neither was my GP when I asked whether overcooking it would destroy.. thats really good to hear. Thankyou.

Mmm naughty DD too!! No, I don't use the water for anytjing.. cant have soups now due to onion, garlic n tomato being off the eating list. Thankfully the cuisinart is superb at smoothies too for allowing me to eat spinach for more iron. Thats a really good idea though, I ought to think of something I could use the water for.. even if I tried it in my smoothies with coconut milk I'm sure it wouldn't be that bad!! Brilliant, thankyou...
 
For the lazy like me, Aldi have started stocking tubs of ready-made cauliflower rice flavoured with parsley (although they have it plain as well). The flavours do seem to complement each other. Price is 79p from memory - two portions.

Thats not a bad price.. 95p for a pathetic sized cauli in Tesco this morn.. no bigger than my fist and it will just about if lucky get one measly portion for two people.
 
They have also started selling spaghetti-fied squash and courgettes for a pound.
 
Not bad priced really. I normally try to get organic but organic cauliflowers couldn't get today so ended up with this titchy pomegranate sized cauli!!
Not too badly priced for pre packaged and ready done though..
 
Home Bargains have also started selling chilled spiralised courgette and what looked like butternut squash and cauli rice in tubs, I spotted them yesterday but couldn't get a good look because it was lunchtime and the shop was very busy. I'll have a proper look next time I'm in.
 
I think these items have become much more mainstream for some reason.
 
Maybe an actual turn round for better eating...
