Chia (and other) seeds

Another thread mentioned Chia seeds. A quick google throws up loads of recipes from porridge to bread to cookies. Anyone used Chia seeds or got good recipes?

I'm a big fan of Linseeds, I make porridge and muffins with them. Are there any other low carb seeds that you can bake with?
 
Chia seeds are okay - they don't taste of much really. I did used to like a mocha pudding made with coconut milk, good quality cocoa powder, coffee and chia seeds. I used to have it on a fairly regular basis as (made up) it keeps in the fridge for up to five days. Then one day that mixture raised my bg quite steeply. Went up from high 4s to high 7s at my normal 2 hr post prandial test so I don't eat them any more. So, if you do try them, then experiment and test at 30 mins, 1 hr, 2 hrs and 3 hrs after eating them for the first time just to be on the safe side.

Sesame flour. I find it great for savoury muffins.
Have a look for low carb bread recipes - my niece makes a loaf that has a mix of seeds in it.

I just had cacao zoats with coconut yoghurt and 1.5 tbsp chia seeds (mixed with water before adding it to the rest). It was delicious and I measured 5.0 about 2 hours afterwards.
 
Get the white ones if you can, I have the black ones - and although they're OK - they do look a bit funny mixed with milk. We like them for pudding with a little cream on top and three or four blueberries.
 
Had chocolate chia pudding for breakfast today, it was so tasty!

16g chia seeds
100 ml Almond milk
3 teaspoons splenda
1 tablespoon Green & Black's coco (important to get decent coco)
0.5 teaspoon almond extract

Takes at least 20 mins to set
