Start at 85% Dark e.g. Green and Blacks which I find smooth.

Lindt 90% is lower in carbs and extremely smooth.

I recommend Cavalier chocolates with hazelnuts sweetened with Stevia.

Absolutely safe and doesn’t spike the blood.
