Christmas Mince Pie recipes?

Hi, Does anyone have a nice Mince Pie recipe for type 2 diabetics? I was diagnosed with it earlier this year and i had stopped having anything that bad like chocolates and cakes etc anything with sugar in but it will be my first Christmas with my new girlfriend who isn't diabetic but i want to make it still a special time by trying to have all the usual foods but only diabetic friendly ones. One thing we like is Mince Pies so would love to make some healthy ones. Any other diabetic christmas recipes are most welcome if you have any or know of the decent website. I am Scotland. Cheers

Hi, I don't have a mince pie recipe, but the supermarkets now do no added sugar chocolate in milk and plain, so there's no need to miss out on chocolates, also I think Thornton's do chocolates for diabetics, if you fancy a cola bottle or ***** bear, there's a website called handy candy who do sugar free sweets,

I dry fresh cranberries for mince pies and fruit cake, sprinkled with erythritol and stored in the fridge.
The mincemeat is made a couple of days in advance (or longer) with a little cooking apple pulp, some of the dried cranberries and plenty of spices - cinnamon, nutmeg, allspice, maybe a pinch of ginger, a little lemon juice plus a little more erythritol if needed.
Then I make mince pies with the base made with ground almonds and a little butter (pressed into the tin rather than rolled out.
No top layer.
Cook on 180C for about 16-18 mins and serve with real egg custard or double cream.
Not carb free but a reasonable compromise for me.

(You could use a stevia and erythritol mix instead but I find it overpowers the taste of the pies.)

Sounds quite yummy, it's a shame I didn't see this before I chucked away a punnet of cranberries that my daughter wanted to try. She said they were too bitter for anything, I will have to try and get some more to give this a go.
Could you freeze the mixture once it's made to stop it going bad.?
Or would it be okay to keep in a sealed jam jar like you would keep home made jam and marmalade.?
