Cinnamon - recipes?

I'm trying to find some recipes that use cinnamon. I've looked around on various recipe sites and can't really find anything apart from curries, which I do make and use cinnamon in. Any ideas please and thank you?
 
I imagine it could be used in a chia seed pudding, but although I have some chia seeds, I haven't tried it.
 
I love cinnamon but it can give me really bad nose bleeds (it's a blood thinner which is probably one reason why i's good for our glucose levels :wideyed::wideyed: ) if I over indulge.

I use it in my baking - it's great used in chocolate muffins and cookies; I sprinkle it on yoghurt or cream, add to my coffee, and if I ever treat myself now to a little cooked apple I add cinnamon to that too. If you can find a recipe for low carb ginger biscuits it would probably go well in those ? And as you mentioned it's a regular ingredient in curries. As a child one of my favourite treats was hot buttery toast sprinkled with a little sugar and cinnamon.:p

I put it into bolognaise - very tasty.
I put it into the mince in Moussakka as well and it's delish. I use mashed up cauliflower instead of spud. Not quite the same (particularly when it's not being eaten at a waterfront taverna, accompanied by a bottle of retsina :)) but hey ho....

I love moussaka and my recipe is made with aubergines - the only time I've ever eaten it with potatoes was when we were invited to dinner with a close neighbour we knew from work - he had a Greek wife, and to my huge disappointment she cooked it with potatoes because she thought we wouldn't like the aubergines! :(:(

A proper Greek Moussaka has both spuds and aubergines, in my opinion, but nowadays I tend to go easy on the spuds :)
