Coconut gives you more

Having bought a kilo of coconut flour on saturday, I've been experimenting with things to use it with.

So far I have discovered that a small amount (half a desert spoon) adds quite a lot of quantity to my morning porridge.
I have made coconut waffles though this is a bit of a faff as I have to get the waffle maker out and worse still, clean the waffle maker afterwards.
I have made coconut pancakes - these work brilliantly and are great with berries and double cream. I reckon they would make a great savoury option but I haven't tried this yet.

What else can I put it in ?
 
How about a batter? I fancy trying to make some fish in batter to go with a few Celeriac chips.

Good point! :thumbup: In fact deep fried Thai crab fritters is springing to mind right now! :D

Oooooooh I fancy trying some of them as well. Maybe even some Tempura with nice juicy King Prawns and some Broccoli or Asparagus spears. Who would have thought a Kilo of Coconut Flour could inspire a banquet. :D
 
I'm pretty sure I posted these to the recipe bit but the basics are
1 grated courgette, wrung out in a tea towel, 4 eggs, sweetener, 2oz melted butter, heaped teaspoon of baking powder, cinnamon and any other 'sweet' spice you fancy. Mix it all together and then carefully add the coconut flour one small bit at a time. You'll know that it suddenly takes up the liquid in the mix. I'd guess about a heaped tablespoon? Mix it until it's a soft cake mix, bung in muffin cases and bake.

They are scrummy and I can't eat one so I don't make them until I have to share them. A simple butter icing on top and they are very like carrot cake.

Google Candice low-carb, but be warned, her recipes are so good, you will end up scoffing too much.
 
Wow, thanks for the suggestion wiflib, that blog has some amazing looking recipes in it. Which is good, as having discovered recently that coconut flour exists, I was wondering what to use it for!
 
Silly question, but does coconut flour taste really coconutty and overpower whatever you make? I'm thinking fish tasting of coconut doesn't sound so good (outside of thai meals)

What else can you put it in.............what about the bin :thumbup: :lol: I saw a Come dine with me programme a while ago and the ladfy put Coconut in every dish :shock: I would of straved that night lol

errr... possibly... but it's really really cheap and you don't have to use much so v low carb.
 
Hi Try looking at the Tiana web site. They have a section on baking with coconut flour . They have loads of low carb recipies. I like the cheese muffins and add bacon to the mix, cut them in half and spread with butter and pate. yummy. The meatloaf is great. eat it hot or cold. It can be sliced as required.
One word of caution, most of the baking need to be kept in the fridge. Tend to go mouldy within 3 to 4 days otherwise. However me and my partner are both type 2, which means that most baking only lasts about 24hrs at most.
Having been on a fat and protein diet for a long time, It's great to have the texture of cake/ bread to eat again.
Hope this is of use. Like you I found Coconut flour recently. I suspect many others have found it prior to us.
 
is there a cheap source of it? as £5 for 500 grams is ridiculous.
