Collagenous Colitis

I was diagnosed with Collagenous Colitis about 6 weeks ago. The doc prescribed Prednisone for 7 weeks, I still have a week and a half to go. I've gained 10 pounds while taking it and it keeps my blood sugar so high that I don't even check it any more. My last A1c was 5.7, but the next one will be sky high, I'm sure.

My doc isn't at all helpful about diet for people with microscopic Colitis, so I tried to read up some on it. Looks like no coffee or chocolate, nothing spicy, no nuts or fruits and only meat, fish, poultry and non-gassy veggies that are peeled and cooked soft. Non-gassy leaves out most of the low carb cooked veggies I normally eat like cabbage, broccoli and cauliflower. Raw veggies are out, so it looks like no more salad, either. From what I have read, it sounds like most people who have microscopic Colitis are gluten intollerent, and most likely allergic to dairy and maybe eggs, too. So on the microscopic Colitis forum I found, where they seemed very knowledgable, they recommend to eat no gluten or dairy, and maybe cut out eggs, too. That's fine if you aren't eating low carb (I eat about 30 per day.) But if you do, there sure isn't much food left that a person can eat. I don't know what to do from here.
 
I'm assuming your also under the care of a gastroenterologist for your Colitis, perhaps you could discuss with them about your diet or speak with the gastroenterology nurse, I have a family member with UC and most of the help and support came from the Gastro clinic.
 
Having my gastroenterologist or his nurse tell me what to eat for Colitis poses some problems. My gastroenterologist knows about Colitis, but not about eating very low carb to control my diabetes. I need someone who fully understands both. Plus, the truth is that doctors, including specialists, know very little about diet. That is why they send us to dieticians. But most dieticians don't really know much of the right stuff, either. They only know what they have been taught. The result is that no medical professional will be of much help to me.

I need advice from someone who is controlling their Diabetes with diet, and are also doing a good job of controlling their microscopic Colitis.
 
Well as a suggestion you could continue with your diet and see how you get on, if you have a flare-up then use the elimination diet technique.
 
The past 3 1/2 months have been nothing but one big flare-up, even while taking the meds. Guess I'll try totally eleminating gluten first to see if that takes care of the situation.

Does anyone know if there is a list somewhere of things like gluten-free mustard, mayo, BBQ sauce, seasonings, etc. It is easy to find gluten-free things like cake mix, pasta dishes in a box, etc. which are things I can't eat because they are high carb. But I am having a difficult time trying to find gluten- free products to replace some of the simple products I normally use.
 
Coeliac uk provide a book with gluten free products in it but you have to join. From what I can understand mustard seed itself is ok but it's the other ingredients that it is mixed with that cause the problems. Just looked in the index and it appears that cool mans mustard powder is gluten free.
