If you are a type two diabetic you need to control your blood glucose.
Type twos cannot deal with carbohydrate by the usual methods so that is what you need to sort out - a meter is very useful as people react differently to different foods - and you can get changes throughout the day - I eat about 10 gm of carbs first thing and then about 25 in the evening, because that keeps my readings steady.
Low carb and high fat eating usually results in weightloss, as weight gain is often a symptom of type two diabetes, but you can see what happens and adjust as necessary once you are back to normal on the diabetes readings.
Watch out for recipes for diabetics which contain significant amounts of carbs - either 'because they are good for you' or the dish is intended for type ones.
