I don't understand why you are eating and bolusing expecting to be in the 20s - that's not a normal blood sugar, it's dangerously high. I don't think anyone should be in the late 20s. Ever. It happens, but it's not something you should be planning to have happen, careful use of your insulin should avoid it.
5.7-6.7 is normal blood sugar, not low blood sugar. I don't think it's really anything to question or worry about. Maybe that shows your 1:10 ratio is working well for you. Course, that depends on what your blood sugar was before you ate and what the timing of your post prandial testing was and what you ate.

previously you must not have been on the right regime.
I think you need to keep to a routine for a few months and just test , inject , eat , record , and live your life .

the problem with all foods is that they have a glycemic index. ie. they are absorbed at different rates. That's why a pump has a combo bolus function which adjusts the speed of insulin going into the body. When I was on MDI I used to adjust the time of bolusing to some extent to allow this to more closely match my needs. It is difficult.
