It would be worthwhile testing a few times one hour after the start of your meal. I have delayed stomach emptying, so that I see very little rise after one hour but quite a lot after two. (The usual idea is that the bg rises to a peak at c. 1hr30m and should have gone down by two. But obviously if it has hardly even started rising after one, the number at two hours will be equivalent to what other people see at one. ) Having said that, I would want to get those numbers down. Would you like to post an account of what you eat when during a day? Someone might be able to make some helpful comments.I also found out that any kind of carb would send blood sugar up to at least 10mmol/l after 2 hours.
Even on an ultra low carb diet surely one can and should consume 5 helpings of vegetables a day. It is recommended that those be 2 of fruit and 3 of vegetables, but that aim often gets lost in translation, especially as the phrase is always FRUIT and vegetables. As vegetables contain more nutrients than fruit, we can consider ourselves super - well nourished. Maybe Batgirl could point this out to the nurse.She recommends you get your 5 a day

You're not cutting out food groups, Carbs are not a food group, carbs are in every food group except fats and oils, and besides going LCHF probably increases your veg intake.
It sounds as if you might like Dr Bernstein's book "Diabetes Solution" where he explains his "law of small numbers", that is, exactly as you found, if you keep the carbs low you can keep the insulin low too, which is much safer. The book is a real classic but also has an awful lot of reading in it so you might prefer to go to his site and listen to some of his little "Diabetes University" videos, or read some extracts from the book before deciding whether to get it.He is right, carbs is not a food group and low carbs mean low carbs not no carbs so it just eating less carbs. So many misunderstand that low carbs mean no sugar and some thinks low carbs mean no carbs. Anyway today is the first time i try low carbs and it reduce my insulin bolus insulin require to a minimum and my 2 hour is just under 7 compare to yesterday that spike to 18. Going low carbs for life.
