I am confused as to how many grams of carbs I should be eating to improve my type 2 diabetes. Hannah Sutter recommends less than 60g a day but advice on your forum is that we should avoid vegetables such as carrots. Since these are only 6g of carb per 100g, why do we need to avoid them? An average carrot seems to be about 80g which means that I could safely eat it as it would provide only 5g of carbs. Am I missing something here? Do the carbs change when you cook carrots?
