I use the schwartz chilli con carne sachets and with chilli beans, toms, mince etc the whole thing, excluding rice comes out at 18g of carbs.

I make my own curry, with curry paste and curry powder, fried onions and mince + tin of toms as the base then I add pineapple/sultanas/apple. I have no idea what the carbs are in that though
We normally rotate them every couple of weeks so not too often .We've never used any of these, and do our own from scratch, but the real answer is to cook, eat and test. If it's something you might like to consume regularly (sounds like it is), it would be worth testing before, then an hour as well as two hours later (or even every 30 minutes), so that you really get a handle on what's going on.
Are there any sweeteners in the listed ingredients? As you're learning, not all carbs are equal. Indeed, we all probably have slightly different intolerances.

Haven't had much luck in finding a simple low carb curry I can make myself yet, it needs to be not too ingredient heavy for cost as well.
