Cooked veg - 'liquid glucose' ?

I've just read this on a Facebook diabetes group
"i avoid soups...if you cook veggies they turn to liquid glucose."
Of course I questioned it but not got an answer so far. What on earth are they talking about? :confused:
 
sounds like a raw veg person :) when you boil veg it breaks down fibre bonds and makes easy digestion...vitamiser does the same thing..
that's the least of your worries..don't put in starchy veg in the first place.....fixed
 
They didn't stipulate starchy veg though. I always put some root veg in my homemade soup, i have some every day and it never raises my numbers. The way my levels have been lately the slightest thing sends them shooting up, but apparently not this 'liquid glucose' ;)
 
Usually only little starch breaks down into glucose by cooking. You need digestive enzymes to break down starch.

As Jack says it breaks down the fibre which makes the digestion of the food quicker, but if the veg used is low in carbs then I can't see it making a difference, besides chunky vegetable soup is just as nice :)

If your homemade soup is agreeable to your meter reading then carry on making it the way that you do.

LOL! I know :D I've seen some very strange claims made on the Interweb, and often as in the case of books and websites such as Dr. B, the followers can , but not all, be rather errr, fanatical and evangelical . Their choice :rolleyes:

( They are basically saying , I'm just plain jealous. I'd LOVE to not spike from onions ;):D)
