Hi,

As the weather is cooling I'm now considering warming slow cooker meals. I remember as a child I used to get served heart, liver and kidneys (not all at once  ), so I am looking for cooking ideas.

I have made a steak and kidney slow cooked stew before but if anyone can advise how I could do this and get a lovely thick gravy, like you might get with a steak and kidney pie, that would be great. I think I normally buy lambs kidneys.

Also ideas on how to cook heart would be great, can I just add it to a slow cooked stew? And is beef heart better than say lamb or pig?

I eat Lambs liver fried with onions then put on top of mashed celeriac with gravy. I believe my brother told me Lambs liver was nicer than pigs.

All help and advice will be very helpful.

Lenny in order to get a nice thick gravy, you can roll the meat in seasoned floured (salt pepper and herbs if you want). I would suggest adding any kidney towards the end of the cooking time, so they still remain soft and tender.

At this time of the year I also make ratatouille, which you could try in your slow cooker.

If you go onto the BBC website they have loads of information including techniques and preparation. Have fun and enjoy.

Both lambs liver and kidneys are more tender than pigs, Hugh Fearnley-Whittenstall is a big fan of Offal so try Googling his name for suggestions.

We love eating lambs hearts, usually cooked in red wine with mushrooms, onion and garlic. Just slice it, toss in a small amount of flour, brown it in oil or butter with the onions, garlic and mushrooms, add the wine and slow cook till tender.

Thanks guys, I'll see if I can get some Lamb bits at my local butchers.

Mmmmmm looking forward to some liver, onions and gravy. Yum
