You are a genius! I'll definitely be giving this a go. Swede chips have become a firm favourite, but I'd never thought about hash browns! I really miss hash browns and I have half a swede in the fridge so tea will be sausages and hash browns tonight :D

Make sure the oven is very hot, just roast them until they start to brown but make sure you turn them during cooking.

I peel the celeriac or butternut squash, cut into 'chips' then par boil. While they are boiling, I put some avocado oil into a tray and let it get hot, once hot put the par boiled chips in, I do mine so the chips sizzle a LOT when they hit the tray and put back into the oven. Turn after around 5-10 minutes, then around 5-10 minutes after that - serve. No soggy chips in this house. :wink:

Lots of good ideas there....like some of the others, I mash things like cauliflower, celeriac, root veg generally work well using that method.
For green leafy veg, I tend to shred and stir fry with a chopped onion, and a few bacon lardons. Even brussels sprouts taste good like this! :) You can vary the flavours with different flavoured oils, or herbs and spices....experiment!
 
green beans blanched then stir fried with a little olive oil, garlic and parsley. (sometimes add some red pepper strips; looks very pretty.)
Ratatouille is good; lots of recipes on internet.
Like Nigel I roast a lot of veg (typically peppers, courgettes, onions, aubergine, garlic). Drizzle over a bit of oil, I often add a splash of balsamic and a sprinkling of smoked paprika.
(stick some seasoned chicken on top after about 20 min or a couple of fillets of fish towards the end (dot with butter/parmesan and dare I say a few breadcrumbs) and it makes a full meal.)

A brilliant (and very low carbohydrate lunch) is to split a spaghetti squash, put onto an oiled tray and bake for about 30-40 min (until soft). Carefully remove the hot 'spaghetti' strands with a fork and mix them with anything you might put on spaghetti (very simply cooked lardons and some cheese and maybe a little chopped (deseeded) tomatoes. Put the mixture back in the shells, sprinkle with a bit of parmesan and brown under the grill.
 
Try char grilling veg in the George Forman. Peppers.onions.courgettes,tomato,spring onions you can drizzle a very little oil on if you like.this makes a change from roasting and boiling
 
I would steam or stirfry veg as an alternative. If you are having fish you could julliene the veg and cook the fish veg and some herbs garlic etc in a foil parcel :)
