The main difference between white and yellow corn is the colour other than that there is little difference apart from white corn tasting a little sweeter, the colour of yellow corn being caused by beta carotene, as beta carotene turns to Vitamin A when digested it can be considered slightly more healthy to eat but carb content is about the same.
Or masa harina which is the flour that is used to make tortillas etc. Polenta flour is also something similar, but whatever, they are all made from maize and are high carb.
