Dare I mention the word carb??????

Ah you see profiteroles are ok...I'm sure they're ok :happy: because they are mostly cream and air! I know I'm right ;)
I find choux pastry and éclairs can be tolerated by the same principle as long as you take the carbs into account they don't spike me too much just a bit.
 
Profiteroles are healthy on account of them being smaller than eclairs. Damnit, food cravings! Nice, cold eclairs with a decent chocolate ganache.. But I've found I can ignore those cravings by simply sprinting through that section of the supermarket with my eyes closed. Other shoppers don't understand it's an important health & safety matter. I'm also glad beignets haven't caught on in the UK... I found those more dangerous in the Southern US states than alligators or realtors.

But so far I've managed to resist cheating by allowing myself bad things as a once a month treat. First with spuds, and managing cravings for egg & chips or a nice jacket potato.. But after 6 months, my spud craving's pretty much gone. Now it's dealing with bread.. Especially when Tescos do a nice, crusty 400g sourdough bloomer. Which will be this month's treat, and I cut carbs by scooping out mebbe 200g of the dough to make room for ham, cheese, tomatoes and sliced peppers. Surplus dough goes to the birds, which as far as I know, aren't at risk from diabetes and it's good to share treats. It's also fun that my treats are things that used to be staples!

One of the biggest things I've noticed about low-carbing is I'm doing a lot more cooking, and not relying on prepared meals or ingredients. Which also means less squinting at lables because veg, meat, fish, eggs, cheese etc are typically safe. But dinner today will be scrambled eggs with ham, cheese, mushrooms, tomatoes and sliced peppers. :)
 
I was diagnosed Type 2 on March 22nd and I have just given in to a small packet of ready salted crisps. I am now suffering mega guilt! I don't plan to do it again for a very long time but jeez they did taste good. So guilty
