DESMOND and saturated fat

Hi I've recently been on a DESMOND course. It was interesting how carbs and sugar are broken down in the bloodstream and the effects it can have on your body - mainly diabetic complications.

I'm am on LCHF and I work to 30-50 carbs a day and am losing weight albeit slowly. The main food issue that sprung to mind having discussed it at the DESMOND course was 'saturated' fat. I've read that saturated fats (cheese, cream, butter and other full fat foods) turn into energy when there are very few carbs left to do so and the cholesterol will come down. On the course they are saying that saturated fats are very bad for you and you should eat them sparingly because they cause the bad cholesterol to rise. My question is which is right? It can't be both.
 
Personal experience - butter, cream,cheese, FF yogurts, mayonnaise are all a massive part of my diet yet my cholesterol "bits" improved significantly on each of the 4 tests I've had.

Full fat food doesn't have to be saturated full fat.
I try to go for unsaturated, like olive oil, fish, etc, rather than cream, butter, red meat etc.
 
My "bad" cholesterol has never been as low as it is now, on lots of butter. But then I suspect the reason it was high earlier was because I had untreated hypothyroidism.
 
A lot depends on how you measure 'good' and 'bad' cholesterol as well, and what you set your limits as.
I favour the LDL and HDL classic measurement system.

Thank you Bluetit, I'll carry on and try to eat more omega 3 too.
 
Nice sandwiches on a Desmond course the rest is the NHS diet so a pinch of salt needed
