Well I was quite pleased to eek an HbA1c test out of them, considering how difficult it appears to get them here (according to reports).In 2½ years of eating moderate lchf, I have not been bored with what I eat.
As for the limited range of food to eat the "nurse" needs to read up more on it and see what is readily available to eat on lchf.

I agree. As I keep to under 130 grams of carbs per day, it still gives me scope for variety.Keep up the good work!
From some of the comments I've seen - including on the forum, I feel there's a lot of misconception about what a decent low carb diet entails.I've been eating LCHF for over five and a half years, and haven't yet got anywhere near bored! I'm actually eating a better and more varied diet than I was for some time previously.

Seemingly he hasn’t latched onto the idea of filling up with fat yet.

If your food is making you bored you are not hungry just wanting to eat for leisure.
I eat pretty much the same stuff daily and if i tuck into meal and think meh, I just wait a couple of hours
and the food does not touch the sides.
I tend to view food as fuel these days. but i do have the odd bit of leisure eating cheese on ryvita or peanuts.
Today I had a review of my last HbA1c result and my diabetic condition. This time it was with a nurse that specialised in diabetes. I was interested to see what she had to say.
She said that I was doing well. I explained how I arrived at blood sugar levels that were normal. She smiled and nodded knowingly when I mentioned my own lchf freindly GP and Dr David Unwin. It turned out she was comfortable with lchf but still seemed to gravitate a bit towards the “balanced diet” that Eatwell comprises. As if she couldn’t let go of Eatwell. She tried to encourage me not to go too low on carbs. It was as if things are changing but slowly, like a thawing of snow and ice in a heavy winter.
I explained what I ate now including full fat dairy produce and we discussed my last cholesterol readings which were spot on. She said that she was worried I would get bored on a limited range of foods. I explained that it was best that way to avoid the onset of diabetic symptoms again.
