Actually I don't think you need to worry but get on thyroid hormones and possibly some counselling for your anxiety.
Low carbing is a good idea but if I were you I'd look into the autoimmune protocol, like in grain free, dairy free for a while and then maybe introduce oats again and see if it feels good. Not a lot of fruit but a lot of colours so beet root and carrots but not spuds.
