And they were still soft and springy but they don't fall apart. The continuing story of the Oopsie. I wrapped the remaining 4 bits in double greaseproof and popped in fridge. Removed 2 a wee while ago to make a sandwich. I spread the oopsies with a teaspoon of Helmanns on each bit then added mixed leaves , one sliced cherry tomato and a thin slice of ham. No seasoning - didn't need it. It was excellent. Still an odd texture but it tasted better than a bread sandwich.
Coffee increases my BG. Decaff here I come. I'm at 7.8 whereas normally I'd be back in the high 6's. I guess tomorrow I make sure no coffee before breakfast just to be 100% sure.
Really???? Oh nooooo - I love coffee. I normally have decaff the rest of the day but first thing in the morning I have got in to the habit of having a double Tassimo / Costa Americano. Oops!

I'm still hoping I'm wrong but I don't think so. I need more of theseGoodness, I feel your pain. I gave up caff coffee, then decaff. Then caff tea. And eventually decaff tea. Am now on a poxy coffee substitute that doesn't come close. And herb teas.
No doubt at all that they were harming me, my blood pressure and weird random bg spikes. But my goodness it is hard.
Better in summer, when I prefer cold drinks.
@Brunneria @maglil55 There's a common theme going on here - I wonder if my BG would drop if I stopped my big Americano. There is no way I could drink more than one herbal or fruit tea a day they all make me feel a bit.....Goodness, I feel your pain. I gave up caff coffee, then decaff. Then caff tea. I have tried twice to make oopsies and both times they would have made an EXCELLENT wallpaper glue as they were impossible to get off the baking parchment. Which recipe did you use?The continuing story of the Oopsie. I wrapped the remaining 4 bits in double greaseproof and popped in fridge. Removed 2 a wee while ago to make a sandwich. The Diet Doctor one. 1/2 tablespoon of psyllium husk powder , 1/2 tablespoon baking powder (I used my big serving spoon and put both in a little bowl). I accidentally put a pinch of salt in too. Separated 3 large eggs and whisked the egg whites with a pinch of salt until very stiff. 'Cream' the yolks with the cream cheese 4.25 ozs add husk/baking powder and in my case pinch of salt. It gets quite thick. Once mixed add the whisked whites a little at a time. Try to combine without leaving white bits otherwise it's a bit meringue like. I then used the big serving spoon to do the 6 portions. 2 per baking sheet. I just put greaseproof on the trays before I added the mix. 25 mins at 150c fan oven. I upped it to 200c for last 5mins. Cooked in 2 batches. Removed them from greaseproof straight away and left them to cool. Didn't stick but this is very similar to a flour less whisked sponge which I've made loads of timesI have tried twice to make oopsies and both times they would have made an EXCELLENT wallpaper glue as they were impossible to get off the baking parchment. Good questionhow long do they stay air filled?
I ask because I prefer using my small halogen oven (big gas oven is ancient, heats unevenly, and I don't trust it at all).
So I would probably only be able to fit 3 at a time in the halogen.
Would the 1st 3 collapse while the 2nd 3 were cooking?
No - they didn't collapse at all. The uncooked mix sat quite happily as well in their Oopsie circles while waiting on the 1st batch coming out. I'm going to make more and freeze them. I so enjoyed having a sandwich again. Should have added my sandwich was 3g carbs, 32g fat , 12g protein and 367 calories if you really want to know.how long do they stay air filled?

The psyllium husk made it a more thick mix. Got mine from Amazon and it stayed a nice golden colour not purple.@maglil55 I don't remember putting in psyllium husk, I think all I remember it being was cream cheese and eggs, possibly baking powder. I might ave to experiment again - although I did enjoy those rolls in the sloppy joes recipe - I'll definitely have those again.
I got mine from eBay. It makes everything pale beige. Hmmm purple oopsie sandwich....I wonder if that would tempt Mr C.....The psyllium husk made it a more thick mix. Got mine from Amazon and it stayed a nice golden colour not purple.
