Dislike all food now

I was told I had type 2 twelve months ago, I immediately cut out all sugar , rice, pasta, potatoes, bread ect down to a bare minimum. I have lost excess weight , and I am a vegetarian, I was on only one metaformin and it killed my appetite, everything I used to like is now off the menu, in fact I dont enjoy anything anymore and have given up cooking, I have decaffeinated tea without sugar now, but it is not satisfying. I just heat things up now, I dont have meal times I just eat in the kitchen , get it over as fast as possible. A vegetarian diet is high in filling staple carbohydrates, but now not much is left.

I live in the countryside next to an egg farm so two scrambled eggs on brown sourdough every morning. A semi enjoyable experience.



If I could I would just live on food pills, or human kibble.
 
A low carb or T2 diabetes controlling diet is difficult for Vegetarians, but even some Vegans can manage it,
A good source of ideas is the 'What did you eat today' thread or www.DietDoctor.com or just google your favoutite food and put 'keto' before the name.
Meanwhile:
Only 2 eggs per day? (I'm omnivore and I sometimes eat up to 7 eggs in a day).
What about full fat Dairy?
Real nuts (not fake ones like cashews)?
Leafy green veg?
Tofu - pretty tasteless in itself, but will pick up flavours from sauces, as will mushrooms.
 
I feel for you @Waterworks . I'm not a vegetarian. However I couldn't stomach cutting out most of my carbs and sugars, I've cut down on them. In fact I went extreme for 9 months on a very low carbohydrate diet, but I too lost my enjoyment in food along with losing a lot if weight. There are certain foods I eat over and over because I look forward to eating them. They make me happy. I did lose lots of weight , but cutting out most of my carbs and sugars didn't really lower my blood sugars.
I decided I would burn off my blood sugars through exercise. It's a thing I love to do. I walk on the trails and enjoy nature with my dog. I do a lot of exercise.This has allowed me to eat carbs and a few sugary items. So my diet consists of carbs , protein and some fat. My blood sugars are good.
Exercise may not be a thing you want to do, or maybe not able to do , but for me it allows me to eat foods that would be off my menu with regards to controlling my blood sugars.

Try looking up the carbs in celeriac as a possible replacement for potatoes?
You may get more “bang for buck” with the lower carb content..

I was vegetarian/vegan for a long time and I get your point about it being high in staple carbs. Now I eat low carb, but still a lot vegetarian/vegan.

I am so sorry you no longer enjoy cooking or eating and hope you can regain the pleasure. If you eat dairy, it's easy to get variety and sufficient protein. But it's the pasta or jacket potato that's missing. Still, there's cauliflower cheese. Or cottage cheese pancakes, made with almond flour, maybe sweetened with cinnamon and stevia.

I haven't tried it yet, but Low Carb Food Co does a keto pizza base. That could make a delicious, healthy and easy to prepare meal.

On to vegan: pumpkin seeds add protein to yoghurt, salads, etc. Tofu is a good protein, but a bit fussy to prepare. Seitan is tasty just sautéed, provided you are glucose tolerant. It's delicious alongside a stir-fry, which can be bought prepackaged for easy cooking. I add tinned chickpeas to complete the protein.

I also buy quinoa and cauliflower rice, ready cooked in pouches for convenience, good with various dishes, eg chickpea or lentil curry.

You are lucky to get fresh, free range eggs from a farm. Brown sourdough was a favourite of mine, but began raising my blood sugar too high, so I've switched to a low carb sourdough by Robert Andrew, expensive but I keep it in the freezer and alternate it with small portions of regular sourdough. Btw it makes good French toast, unlike regular sourdough.
