Lamb mince with onion, pepper , tinned toms, stock pot, mint & oregano. Then Greek yog with egg yolk & cheese sprinkled on top & transferred to oven. Serving with leek & cabbage cooked in butter.

Do you have a meter ?

I would need to watch the tomatoes as they are carby but your meter will let you know

Thanks! It's only my first day & ive not had an official diagnosis yet - have a fasting blood test on Monday (after a non fasting one last Monday). I read the label on toms & thought they were high so I'll bear that in mind. Any tips gratefully received

Well every bite of that looks delish. Quite the cook you are huh?
I used to love to cook but got over that. I just keep everything very consistant and simple. I cook a lot in bulk and freeze. Loads of options always available.
Your pic kinda makes me want to fire up the oven haha

I love cooking & used to share all my pics on my ww group on FB but thinking I'd get shunned for this!!

Looks gorgeous and mouth watering the only thing is the tomatoes but I have found that they don't spike me excessively so will pass your recipe on to my chef. :)

Just checked on a tin of tomatoes and it says 3.5g per 100g of carbs - is that considered excessive? that's only 14g in a whole tin, and that picture looked like it would feed 4. I'm new to this to genuinely surprised.

Nope that sounds fine to me. As a very vague and general rule of thumb I am for things with under 5g/100g of carbs. Obviously it depends on how much you are using. Your metre testing will soon tell you what you can and can't get away with!

Are you counting the carbs in the things you are using? It's surprising how they add up even with veg. It looks delicious and very filling:):)

There are a couple of things you have used that I have to be careful with, tomatoes like others have said also onions and the stock pot depending on which one it is - some of them have as much as 8g carb- you seemed to have grasped the concept really well - getting your meter and counting the carbs will give a much clearer picture of what you can tolerate - you are definitely on the right track - a word of caution if you are trying to lose weight as well as manage your bs - I found after a couple of stone weight loss I also had to be mindful of how much fat and needed to count calories as well - still do:(

Read labels carefully. Not all tins of tomatoes will have the same carb content.

I guess tinned tomatoes are kind of like liquid carbs and will spike faster but I still get a small spike on the fruit itself. I also need to be very careful with onions. About a tsp works. And it can be shocking how veg carbs add up. Cabbage , bell peppers and leeks aren't free either. All very sad but true.. All this is why I keep it simple and consistant. Didn't like that much in the beginning but keeps things fear less stressful. Meal size is another thing to watch for. How many meals will you get out of that?
All that being said if you were a carbohloic including grains starches fruits sugary foods etc before this I am sure it will be a great improvement

What's stock pot?.. Broth?

Me too. Lots of food there. . I think many of us eat far more food than we actually need and the better quality the less food we need.

That was going on the table for 2!! Should have said!! Another 2 portions left. Also used too much butter in veg!
