I am really getting frustrated with not being able to make sense of my figures and thus the impact that foods might have causing a spike and let me explain.
Had a really good evening yesterday, had low carbs all day consumed less than 15 in entire day - 16 hour fast between Sunday night and Monday light lunch - main meal in the evening some fish salad ad some berries with double cream. No need for any snacks felt quite full. Did and evening power wall and got my BG down to 5.4 later in the evening and then stayed around that and all through the night going as low as 4.5 in the night. I use liber. Woke up this morning to 5.5 really pleased with that.
No breakfast, 2 apple cider vinegar pills, and two vitamin pills.

Drove to work, 20min lovely journey - half through country lanes, half on the motorway, no stress probably the most relaxing part of my day. Parked - checked BG 7.1. Why - why oh why 7.1, If I had a meal I would of been concerned that the rise was 1.6.

So I have read that sometimes the body needs something - so I had a small handful of almonds and a cup of team. 7.4. Now I am 2mmol above the baseline 5.5.

Can anyone help explain what the heck is going on and what I need to do. In the last 6 weeks of testing I have not seen DP at all, or maybe a small .5mmol peek nothing major.

All suggestions working - I am sure I could not eat any less or any less carbs been on less than 25 now for best part of 6 weeks and am really careful with everything I eat.

From what I experienced your readings are absolutely to be expected - after a while of eating low carb your insulin levels start to fall from time to time and your readings go from dead steady to all over the place as things begin to unplug and glucose starts to flow around - you might suddenly find that your waist is smaller and your clothing suddenly starts moving south at inopportune moments as your fat also finds the urge to migrate to pastures new.
All I can advise is to ride this new wave and trust that all is working properly in the present circumstances.

6 weeks into low carbing and you are in the 5's already... that's great! I was still getting 6's and 7's
The odd "off" reading isn't anything to worry about - it may have been driving even though you were relaxed.. it may have been something on your finger. What is so much more important is the general trend which you seem to have aced.. bloody brilliant! Well done indeed.
