Hi,
Just wondering if anyone else has noticed that if they have eaten a high carb meal (pizza, white bread, cream eggs etc..), blood sugars start to rise, drop for a short time and start rising again (double dipping).
I presume initially the pancreas is producing insulin, then as the pancreas runs out of steam and stops producing insulin the blood sugars carry on upwards, any thoughts/alternative theories would be appreciated.
