Eating More Calories while Keeping the Carbs Low

I have been working with a dietician while I have been able to keep my blood sugar under control my going low carb. The problem is that I need to eat more calories. Currently I am looking into finding high calories food that are low in carbs. Currently I have added tofu to salads and wonder if anyone might any idea of any other foods i might try. I understand that fish is always good, but I live in central Texas and seafood is very limited. I try to eat salmon twice a week.

Do you eat meat?
Tofu in your salad isn't that high calorie but what about bacon? Mayonnaise? Eggs?
Pork belly, spareribs with a fatty dipping sauce? Cheese, cream cheese, nuts?
 
Why do you need to eat more calories?
Did your dsn explain this?
 
There is a whole world of real food that just doesn't contain carbs - this is not a problem.

Is it really that you are worried about eating foods with fat in them?
