Effectiveness of insulin after consuming extra virgin olive oil

I take actrapid before dinner. Dinner was pizza and I added generous amounts of olive oil on the pizza.

My pre-dinner level was 280. Post dinner it was 400 despite the actrapid.

Could it be because of the oil? Do dietary fats render insulin ineffective?

Fat should not affect the efficiency of insulin.
Typically, it delays the digestion of carbs.
High carb, high fat meals such as pizza (and curry) are renowned to be challenging to calculate and time insulin doses for this reason.

How did you calculate your insulin dose, how long before the pizza did you take it, how long afterwards did you measure your levels, what else were you doing that could affect your levels (exercise, stress, etc.)?
These are all things to consider. Olive oil is unlikely to be the reason for going higher than you expect.

A good way to think about dosing for carbs is:
quality - how much fibre does the food contain?
quantity - the main one we measure!
company - what are you eating your food with - as discovered pizza is infamous for its slow absorption whether made with olive oil or just because you've gone for a heavy cheese variety.
If you are not using an insulin pump with a mechanism to spread the dose over several hours you may wish to split the bolus over dinnertime and bedtime.

Hi @Mesuggah and welcome to the forums. Can I ask what type of diabetes you have?

My understanding is that fats slow down the effect of carbs so many people have to split their bolus when eating pizza, because they get a second peak a while after they take the pizza.

I don't think so, though maybe someone else will disagree.
Are you sure you took enough bolus for the total carbs in the pizza? Also, I personally find that my insulin resistance tends to increase when my blood sugar is one the high side, and 280mg/dL is 15.5 mmol/L, which would be high enough to do that for me.
