It sounds more like intolerance to egg white actually.

An egg white omelette should give you the answer.

Apparently my Grandfather jumped ship in New York around 1930 and never left. I was told he spent some time as a rum runner.
You never know.;)
 
Eggs are a wonderful source of protein ;):)
 
I'm a US nutritionist and when I meet a nutritionist, dietitian, etc, I always ask them what they think of eggs. This tells me how much they know about nutrition. Eggs are a powerhouse of nutrition, the whites are mostly all protein and no fat, the yolks contain many healthy ingredients and high protein and fat. Very low glycemic and won't raise cholesterol much. Here is the kicker - egg yolks and red meat are the highest food source of arachidonic acid, the raw material for all inflammation in your body and brain. High OMEGA-6 fat diet, from vegetable cooking oils creates even more arachidonic acid. As a diabetic you don't need more inflammation, you already have plenty to deal with. I recommend 3 whites and 1 yolk, pretty easy with scrambled eggs..
