Hi as the title suggests I've been in the kitchen testing various foods, I go back to work on the 5th Jan so I've got to get a quick and easy breakfast sorted as I don't have time at 3 am to sort it, it was a bowl of cornflakes, a coffee and out the door was I, now the cornflakes and other cereal have gone the way of guinness and the sweet tub has the top screwed firmly down I thought I'd better find quick and easy food.

I've been shopping and bought tinned rice pudding 17% carb, Brazil nuts, Pumpkin Seeds, Almonds and a selection of cold meats, I've just ate 100g of rice pud and bulked it up with 4 Brazil Nuts, 2 Almond Nuts and a sprinkle (about 10) of pumpkin seeds, it was really dry so I put some strawberry yoghurt drink 12% carb and then a teaspoon of greek yoghurt.

So I think I've just eaten about 30 carbs, I just need to wait now and see what the spike may be, (if any).


 
I agree! I have about 8g carbs for breakfast and still spike! Tinned rice pudding is lethal - we make our own rice pudding and that is also lethal. Too much milk, too much sugar, and starchy carbs in the rice. Good luck!
 
I'm hoping I can cope with 30 carbs, I wonder if I could have eaton less because right now I feel a little sick.
 
Eat according to your meter ,record what you ate and get a good and clear picture of your situation. If you need to eat a good and healthy breakfast its better to get up a few minutes earlier and do it properly, after all its your health and well being thats on the line. If your are married and have children then its YOUR responsibility. With a bit of effort I am sure you will come through with flying colours.

In a similar position as I am dreading going back to work on the 5th as it will be a challenge to fit in the diet and exercise. The only breakfast I have found that works for me is a 2 egg omelette which I add with a piece of toast (15g of carb). Usually results in a 0.3 increase after 2 hours. I plan to make 2-3 omelettes in one go during the evening and put them in the fridge. In the morning all I have to do is heat it in the microwave and put the bread in the toaster.

I often have 30g carbs a day not in one hit. And breakfast is often the worse time for dealing with carbs. Berries and Greek yogurt with flaxseed is a good cold choice or else make a crustless quiche with a ham base and loads of mushrooms etc. can be reheated in microwave.
 
We had a joint of ham during Christmas and I've sliced it up and put fried egg on it to find no spike at all, I plan to take boiled eggs to work with me, also I plan to take my own bread and butter to a snack van and ask them to put me egg and bacon in it.

Oh ok thanks I'll try it, how do you make quiche and I was avoiding mushroom as they are from underground.

Mushrooms are fine. Very low carb.
For quiche I line quiche dish with ham slices, fry some red onion, mushrooms, maybe bit of bacon till soft( could also do same with sausages) pop in dish. Mix tub cottage cheese with 3 eggs, splash milk ( or use cream and more cheese) and lots of grated cheese. Season. Pour over onion mix, slice a tomato and pop on top then cook in moderate to hot oven till springy to touch and slightly browned on top. Cut into wedges. Reheat till piping hot in microwave. Takes about 2 mins in mine.
 
Well 2 hours after eating my BG is at 5.8, so it only went up by 0.5, and I could have had less because I think it was a bit to rich for me and I felt sick.

What about forgetting the bread and just having extra bacon and egg?

Thanks I don't cook much, well truth told I don't cook at all, I can put stuff together i.e. Sunday dinner, a salad and stuff like that.

Keep testing Dave. You could have a second spike. Rice does strange things, and there was a lot of fat in that meal which may skew things a bit. Test at 2.5hrs and 3hrs.
