Hi!
I usually have my dawn fasting level between 7.2 and 8.1 mmol/l.
I take only 1x 500 mg Metformin in the night after dinner.
I have breakfast.
Is this safe?

it would be safe if you don't exceed 6.9mmol/l
Also, check if you are facing dawn phenomenon which may cause you high readings, more than 6.9.
you can get more information about it from this link

Well lower numbers are better but on the long run I don't think those numbers will cause any damage BUT AGAIN I am no professional.

Hi - no one on here can advise you to take more or less meds as that should only come from a doctor.
In terms of FBG your diet will be influencing this as well. What sort of diet do you follow? Is it helping you to reduce blood sugars over the medium term?
Whether or not you eat breakfast will depend on how you function without it - some people do skip it as part of a plan. Personally I always have breakfast even if my readings are higher than I want . If I get hungry I’m more likely to eat “off plan”.
