Fasting glucose higher than when I was not watching caebs

I have type 2 and take 500 mg metformin in am and 1000 in pm. I had a lot of luck with low carb/keto in past but went back to regular diet with higher carbs. I am trying to get back to low carb but it is frustrating.

Today I have had coffee with heavy cream, chia pudding from coconut milk and keto granola 11 g total carb, 3 g net for granola. I walk in the late afternoon. I will have chicken and cooked zucchini zoodles later.
Not sure what else yet.

Fasting glucose is usually under 120 mg/dl but now is over 140. I know I am eating less carbs. The last time I tried low carb I got it under 100 mg/dl.

A fasting test is just a measurement that can distorted by when you do it and if early enough, for example when rising could be skewed by something called dawn phenomenon. This is a normal function that your liver gives you a boost of glucagon to get you the energy to get you going.
If you do want a more stable fasting reading take a pre meal breakfast test about half an hour or more after getting out of bed. Then two hours after first bite.
testing should be used to determine what foods spike you too much. You use testing by taking a pre meal, then two hours after and if your two hours test is 36(2mmols) higher than pre meal. Then something in that food is causing it.
Keeping a food diary will give good information about how to use food to control the diabetes.
