Vegan Low carbing must be a real challenge.
Are you able to add in mayonnaise, coconut oil, hemp oil, rapeseed oil, etc. to make you feel comfortably satisfied, without adding in more grains.
For instance could you have berries with coconut cream, or make some vegan fat bombs with a few cranberries in to give a little fruit flavour but mainly made of the non-carby stuff.

ok I took the banana off the list and im under 130g carbs nowso thats a bit better for today but I was just confused aswell because my fasting is in the 5s only and yet 2 hour pp is stuffing me up but I guess thats normal then given what I am eating

My fasting has always been in the 5s, straight from just after diagnosis. I have never had impaired fasting glucose. It doesn't mean my insulin was working properly because my post prandials were not good at all. The aim of the game is to be as flat as possible. It is variances between low and high that cause the damage, and it can sometimes be better to run a little higher as long as you are not having swings up and down.

Bananas are instant glucose. They convert as soon as they hit your mouth. This is the reason tennis players always ate them between games before they began to use glucose tablets, and you still see them eating them sometimes. Along with grapes they are the worst fruit possible for blood sugar levels. Berries are much better.
