I want to ask this. Comparing the post meal readings after eating two meals with the same types of fat but different quantity (one with 15g versus one with 45g), other than that protein and carb (same in quality and quantity). Will the glucose reading two hours after first bite for the one with higher fat be higher? Or will it be the opposite? Will the extra fat consumed have a direct insulin resistance impact on the same meal?

Fat delays the absorption of carbs.
With type 1, this means we need to inject insulin later.

With insulin resistance, I assume this will mean your body has longer to react to the carbs so will be better at coping with them ... and result in less affect on your BG.

I read somewhere today that saturated fatty acids in the blood will somewhat affect the sensitivity of the insulin receptors.

Maybe one way to test out will be doing a after 12hours fast, 75g glucose load with and without three table spoonfuls of palm oil. Then take the post two hours readings and compare.

So instead of blood glucose peaking in around the second hour after first bite, when will the peak occur?

What I am attempting to suggest is that the peak may not occur because your body can cope with the slower carb absorption caused by the fat.
But, we are all different. So all we can do is try it and see.

NO, the fat in meal has no impact on resistance. It plainly slows the digesting of the carbs. It means, without fat you will get for example 2 points increase in one hour after meal and after two hours you will be back at the start. With fat you will get only 1 point increase, but for a longer time.

I do this kind of thing on special occasions. If it is a birthday and I have a pizza I make sure I get one dosed to the nines with plenty of toppings like salami and cheese. don't go for the Margherita. It definitely causes slower absorption of the carbs reducing the highs. The downside being that they are slightly elevated for a bit longer. So instead of jumping from mid 5s up to 10 or 11 for 2 hours it will only go to about 8 but for 4 hours. It's actually quite handy sometimes but of course, not too often. I have even found that if I have a very low carb dinner I can handle a full fat ice cream ( only 50g ) because of the fat content. A light ice cream sends me to outer space because they replace the fat with sugar.
