I finally got around to trying homemade fathead pizza. I can't believe it took me this long! It was very tasty, and was incredibly easy to make. I went from wanting pizza to eating pizza in about 45 minutes. The texture was perfect for a thin-crust pizza, and the flavour was very good. This is miles ahead of the "keto pizza" available from Pizza Pizza here in Canada. The only complaint I could possibly make is the outside crust pieces are a bit on the dry side. Next time I'll use a little chipotle mayo as a dip. No pictures...I ate it all.
 
You can use it for things like sausage rolls, I am told, but it needs careful cooking - use cooked sausages which have been cooled in the fridge, turn them over a couple of times during cooking and cover them over to stop the drying out in the first part of the cooking. Open them up to get some colour.
 
That sounds amazing. I am 100% going to try that.
 
I use left overs rolled very thin and baked til crisp. Ideal as a cracker alternative and keeps well. Can add herbs, spices, garlic etc for more flavour. Must make some more.
