First Camping Trip

Have just come home from my first post-diagnosis weekend away. I was really worried about managing while camping, but it worked out fine. When I say camping, I mean I sleep in the back of my half converted transit and cook outside on a one ring camping stove. Just in case anyone's interested, the meals went as follows:

First evening: Barbecued burgers with cheese and salad (I did put it all in a pita bread, which is something I wouldn't usually eat).
Breakfast: Egg and bacon.
Lunch: Almond bread thickly spread with Boursin, and cucumber
Second evening: Chicken and spinach curry I'd cooked and frozen in advance - defrosted and ready to cook by the time we wanted it. (My friend had rice with it.)
Breakfast: Gorgeous omelette made with eggs, rest of Boursin, rest of bacon, rest of herby salad leaves and slices of emmental
Lunch: Almond bread, cheese, salad.
Many many cups of tea all the time.
That was it, came home then. I did have quite a bit of red wine - I don't usually drink at all so that was fun. I didn't test while I was away, so don't know really what happened to my BG, but I tested when I got home this evening and it was 5.3. I notice that if I go really wrong, my BG stays higher than usual for me for a couple of days so take this as a good sign.
Could do with working out some non-cheese based camping food but think I did OK for a beginner!
 
That sounds fantastic.

I used to take a wee gas stove, a wok and a spatula.
Oh, and a kettle with stainless steel thermal travel mugs...

Used to do the bacon and egg brekkie, and mainly stir fries. Or cold meat and salad leaves eaten like popcorn out of the bag.

That defrosting curry idea sounds great.
 
Glad you had a good weekend, nothing like getting away from it all :) I haven't been out in my camper yet, not felt well enough but I'm getting the inverter sorted now and fridge fixed, so hoping to get away soon. It'll be my first time since starting lchf so I really need the fridge for the extra fresh stuff I eat now - I used to rely a lot on beans on toast, sandwiches and cereals!
