I do drink loads and yes I run before breakfast. Can't seem to change my running time.Excellent results all round I would say, well done. Clearly you know more than the medical team who seem clueless.
Fasting levels are often the last to come under control (have a read of Jenny Ruhl on Blood101). My recommendation would be just to carry on what you're doing, it's obviously working but it can take time for your body to fully come to a new equilibrium.
You could reduce your carbs a little more I suppose; do you drink enough water? Do you run before breakfast?
