Flax crackers
Measure six tablespoons of ground golden flax meal into a mixing bowl. Add a few shakes of dried dill, onion powder, salt, cayenne pepper and mix well. Add half a small glass of water and mix until all the ingredients come together, then let it 'rest' for a couple of minutes.
Take out an egg sized piece and between two sheets of baking paper, press it down, then roll out quite thinly. Peel back the top layer of baking paper, then to make them look good, cut out in fancy tiny circles with a very small biscuit cutter, and place the shapes on a baking paper covered, microwave platter.
Zap for 2 minutes in a microwave oven and slide the crunchy biscuits onto a cooling rack. If they are not crunchy enough, you can return them to the microwave oven for more time. Please note ! they will crisp up more as they cool. When cool, store in an airtight container. These can also be cooked in a conventional oven.
Variations: Add some grated parmesan cheese, use half almond meal and half flax meal....... experiment and enjoy.

Flax Cracker Mix
I've been keeping a container of flax meal plus seasonings in the refrigerator, ready to be mixed with water and zapped in the microwave into practically "instant" crackers. The starting point for this recipe is a Cleochatra recipe posted by Star. My adaptation is to mix it up in quantity and keep the seasoned mix on hand.
2 C flax meal
1 1/2 teaspoon (1/2 Tablespoon) onion powder
1 1/2 teaspoon (1/2 Tablespoon) celery salt
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon Italian seasoning
1/2 C grated parmeson or romano cheese
Mix all together and keep in a jar in the refrigerator.
Topping: All ingredients but flax meal, combined (in whatever quantities) and placed in a separate container (I use a snack-size bag thrown into the same container as the cracker mix.)
To make a serving or two of crackers, take 2 rounded tablespoons of the mix and combine with 2 tablespoons water. Mix and allow to thicken for a minute or two. Spread thinly on parchment paper and sprinkle with some of the topping mix. Microwave on high for 2 to 2.5 minutes. Remove from parchment paper and allow to cool. Break up into crackers. Great topped with cream cheese or flavoured spread.
