Flax crackers

Measure six tablespoons of ground golden flax meal into a mixing bowl. Add a few shakes of dried dill, onion powder, salt, cayenne pepper and mix well. Add half a small glass of water and mix until all the ingredients come together, then let it 'rest' for a couple of minutes.

Take out an egg sized piece and between two sheets of baking paper, press it down, then roll out quite thinly. Peel back the top layer of baking paper, then to make them look good, cut out in fancy tiny circles with a very small biscuit cutter, and place the shapes on a baking paper covered, microwave platter.

Zap for 2 minutes in a microwave oven and slide the crunchy biscuits onto a cooling rack. If they are not crunchy enough, you can return them to the microwave oven for more time. Please note ! they will crisp up more as they cool. When cool, store in an airtight container. These can also be cooked in a conventional oven.

Variations: Add some grated parmesan cheese, use half almond meal and half flax meal....... experiment and enjoy.

Flax Cracker Mix
I've been keeping a container of flax meal plus seasonings in the refrigerator, ready to be mixed with water and zapped in the microwave into practically "instant" crackers. The starting point for this recipe is a Cleochatra recipe posted by Star. My adaptation is to mix it up in quantity and keep the seasoned mix on hand.



2 C flax meal
1 1/2 teaspoon (1/2 Tablespoon) onion powder
1 1/2 teaspoon (1/2 Tablespoon) celery salt
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon Italian seasoning
1/2 C grated parmeson or romano cheese

Mix all together and keep in a jar in the refrigerator.

Topping: All ingredients but flax meal, combined (in whatever quantities) and placed in a separate container (I use a snack-size bag thrown into the same container as the cracker mix.)

To make a serving or two of crackers, take 2 rounded tablespoons of the mix and combine with 2 tablespoons water. Mix and allow to thicken for a minute or two. Spread thinly on parchment paper and sprinkle with some of the topping mix. Microwave on high for 2 to 2.5 minutes. Remove from parchment paper and allow to cool. Break up into crackers. Great topped with cream cheese or flavoured spread.

Of course you can adjust the seasonings to whatever quantities and types/flavours you like. The above choices and proportions are what work for

this was Red's variant:
Ok I tear open a bag of ground flax from sainsburys 175g
Then tip it in
Then I tip in 100g sesame seeds
and I tip in 60g of parmesan
Then some salt and black pepper
Then tip in some garlic powder about 2 teaspoons
Then I tip in loads of rosemary
Then I mix it with my hands

Then I tip in some water, not much hardly
Then I spoon it as equally as I can over a baking tray,
A long big one. And a round one
And then I compact it all with a spoon to as thick as a ryvita

then I use a fish slice to separate each piece before I cook them

And then put it in a hot oven at number 7 for about 13 minutes


I’ve burnt a lot of batches but now I just get them out before they burn and then they are like crackers. and they taste a bit like brown toast if you put them in the grill b4 you eat them, more tastier probably. I don’t put them in the fridge now just in a box with a lid. they are really good to have with other stuff. like cheese pate etc they only take me 15 minutes the whole thing and they smell good.

Sounds good. How long do the cooked crackers keep for in an air tight container?

These would be ideal for peanut butter or pate...

(Y'know what - once I've bought my coffee grinder (for gringing Flax Seed), I'll be making these with added marmite...)

sorry patch I misread your last post.

The coffee grinder I use now came with the house and is electric and old. But I found its brilliant. It has a blade that spins. I recently went on line to see if electric coffee grinders were common as I’ve only had the hand mill type ones before. I came across a coffee grinder online shop and became aware of a discussion there in favour of burr grinders which are expensive. And cheaper options. I’m not in the market myself so didn’t read on.

I got my coffee grinder at a carboot for £2 so if you are able to get out and about, try that or the good old charity shops.

I only use mine for grinding nuts or seeds and not coffee, if you need to clean your grinder then just whizz up a slice of bread and it all comes clean.
