i made some bread last night with some milled flaxseed from linwoods the packet you buy from holland and barret. receipe tuned out lovely . only thing is at a fiver a packet i can only get about 2 makings out of the packet. are linseeds the same as these are a cheaper alternative. a bit confused the flax seed i use states 0.5g of carb per 30g serving. but when i look at cheaper alternative flax seed in the supermarkets the carb shoots up dramatically. is this because the flaxseed i use from holland and barret is the milled stuff. also has anyone tried whey protein the type body builders use. problem is the doctor has told me not to lose anymore weight but i cant because i need to exercise to keep sugars in range. any weight gain ideas without affecting blood sugars?

Try this - buy flaxseed in the non-fancy plasic packet from H&B (it is much cheaper than the fancy linseed they are selling) = 0.7 g carb per 100g so v low. Then mill yourself in coffee grinder or blender. Has the same consistency as the linseed and I can't taste the difference. Actually I have been wondering if they are one and the same?
I am also using whey protein powder as a part substitute for flour. That also works well.
I tried making bread with yeast last night. It was OK but any hints on how I can get it to rise more - I don't have a bread machine so used the bread hook on the mixer to knead and used the xanthum gum to combine it. But it toasted great for breakfast, I could spread butter on it and I'm going to have some more now.
Maybe this should be over in the food forum?
Did your bread have yeast and what recipe did you use? M

I'll try that one next time with the cheaper seed.
I'm like you in that I don't need to or want to lose any weight. Finding it a battle as a skinny T2 to maintain weight and bs levels so these LC baked products really help as it gives me something to put butter and cheese on which are high in calories. Also cream is high in calories so I make muffins and sugar free jellies so I have something to eat with cream.
My treat for later is to make my first diabetic cheesecake. Have OH parents coming for lunch on Sunday and want to try out and see if not only is it diabetic friendly but OK for "normals" as well. And it will be high in calories. Can then exercise knowing that I've stocked up on the calories. M
 
Wow Bedshaped - that's brilliant.
See why you want to stabilise. Eat more cheese, meats, cream etc is my advice because as soon as I stop doing so I lose weight. M

I have tried this but the seeds are so small and shiny that they just whizz around and the motor gets hot without actually milling/grinding. :( :?

Mmm. Maybe down to the type of blender? Mine was a cheap one so could be less powerful. I only did about a quarter of the bag and at a low speed. M
