HI, I woke up this morning with 3.1 - hypo - which I treated with jelly babies. My bs then rose to 11 so I ate breakfast and injected the usual 3 units of Novorapid. Since then my levels have been falling rapidly and rising all day - from 4.1 up to 10. I have eaten carbohydrate when it's been low to bring it back up again only for it to fall minutes later!

What could be causing this?
 
Waking up with a hypo will mean that after your jelly babies and your breakfast your body is prioritising getting glucose back into the liver after it was released by an alpha cell response to the hypo. If you are bolusing for the carbs you are eating, you might be wise to reduce your I:C ratio or just have a light unbolused for snack to allow things to stabilise while your body is prioritising getting glucose into the liver, so not allowing it to sit in the blood or in fact do what it usually does with fuelling your cells - so if you're doing any activity today you might not have a lot of glycogyn available in your muscles, so may tire quicker.
 
I hate waking up hypo as I know for the vast majority of the day my levels will be like a roller coaster :(

There are few reasons why you may be struggling to maintain your BG.
As @catapillar mentioned, your body is probably prioritising getting glucose back into your liver.
You may want to review why your liver reserves are low. This is likely to be related to what you have been doing over the weekend. Have you eaten less, drunk more, exercised more? All these could affect your liver glucose stores.
In the meantime, keep your hypo treatment to hand and don't be afraid to over test.
