food dilemma

Well I'm usually quite upbeat, but yesterday and today I'm struggling. I am vegetarian and have been for 5 yrs, however every now and then I hit a wall about what to eat. Realising this diabetes stuff is for life I'm not sure I can sustain a veggie life. Theres no filling up on bread or rice. Even my curries, healthy tho' they are look lonely without chapatis or rice.
Not a good day, but it will get better.
I know its my battle, but it would make it much easier if animals were better looked after, maybe I should lose my conscience.

Have you looked at Rose Elliot's low-crb rcipe book for vegetarians? I can't remember it's proper title, but search Rose Elliott on Amazon and you should find it.

It was written to help vegetarians who wanted to do Atkins, not diabetics, but I'm sure she'll have some good ideas.

viv you wouldn't believe my book cases. they groan with cook books. Yes I've got hers too, bit boring tho. I'm more into Yotam Ottolenghi and Denis Cotter. It easy being a low carb meat eater, with veggie you have to think ahead, a ow carb veggie is sooo much harder. Now if only I lived in warner climes. Salad every day wouldn't be a problem.
 
dawn - do you bake your own low carb bread? There are some recipes that you can adapt to make them into flat breads, eg add herbs and spices and brush with ghee, you can also try the cornbread, its lovely with soups and stews and even curries.
Do you cook with seitan and tofu?
Look through the low carb recipes thread, there are lots of recipes that you can adapt, make them vegetarian.
