Food experimentation

Hello all - I have a question about what to make of the results gleaned from food experimentation.

My husband, who has recently been diagnosed as having T2, has been trying to find out what different foods do to his BG. He ate something yesterday that made his BG spike to 10.2 after an hour (up from 7ish), but it had returned to 7.2 after two hours.

Ok, it came back down again, but how concerned do you think he should he be about the spike?
 
Depends on what the food was, and if there is an alternative to it that might give different results.

I wouldn't be hugely concerned about it - but find an alternative if you can.

Also - the starting point of 7mmol/L is significant. If he had started at 4 or 5mmol/L, I'd wager that the same food wouldn't cause such a big spike.

Keep on experimenting!
