food - finding it very limiting - any ideas please?

We are finding our food choices very limiting can anyone offer any tasty meal solutions please?

At the moment we are stocked up on salad and veg... For my brother, two pieces of wholemeal bread with a meat/fish and salad filling works well as it does with a small portion of rice or potatoes instead of the bread. But it seems we are eating much the same things which are also very bland in taste (even though we use herbs and pepper to flavour).

We need to consider low salt, low fat as well as low sugar (including relatively reduced carbs). So sensible snacking also becomes quite hard to work out too... ie. we have worked out banana's are out as are some lovely meat snacks because they are high in fat and salt!

I would really appreciate any idea's you may have for tasty meals and snacks? We will be going shopping over the weekend so I can make a list.

Snacks

Babybel light cheese, maybe wrapped in italian ham or other lower salt
Fish pate (tuna, salmon etc)
Unsalted Macademia/brazil nuts
Almond biscuits (home made, see recipe section)
Ryvita/oat cakes and peanut butter (though salt might be bit higher)
Some yoghurts are ok (better than bananas at any rate)

Make frittatta/omlette and slice it up for snacks

There are lots of meals - check recipe section
I make chicken curries, lasagne (with hardly any pasta, courgettes to line the layers)
Cauliflower rice for the chicken curries/thai curries etc
