Great post Catherine! Just by understanding the concept of GI transformed my diabetes control when I started with a pump. Finally I was able to spread an insulin dose over however long I wanted, to match the slow release from low GI foods. I can now maintain flat bg levels pre- and post-meal for almost any kind of food, even up to 6 hours after eating. I have huge respect for the value of GI, even though I'm not a strict follower of the diet myself.
