Some guidance would be welcome. I've stopped the sweets like ice cream (had one major slip up where I was in my usual I don't care mood, and got incredibly ill. It was then that I learned eating that way is for a diabetic what self harm -like cutting - is to another person. So I have learned that lesson.) My issue is a luxury problem really, I live were I work and we have talented cooks and a chef. So the food is typically really desirable. Add to that my problem with self control around food, and I see that I still have an issue. It still stems from the I don't care attitude or the negative mood that I'm typically in. Any thoughts on getting to that mental state of taking care of myself because I want to? Thanks!!

If your cooks and chef are really talented, then providing delicious low carb meals should be no effort for them... If we as normal home cooks can turn out yummy low carb food, then it should be a complete doddle for the professionals! So set them a little challenge. :D

And as long as you use a low carb sweetener, ice cream is essentially an ideal low carb food - just think all that lovely cream rather than the now general artificial/chemical ingredients. I generally eat better now than I have done for years.

You sound like you need a morale booster for this - as I did myself. I tend to bang on about this, but I found the support on www.dietdoctor.com a big help with encouraging me to make changes that would make a difference.

I'm so glad to have found this forum and all you supportive people, I had my nurse appointment on Friday and felt that I already knew more about low carbs than she did.
I'm going to try making home made ice cream after my 8 weeks, please recommend a low carb sweetener ? I have always avoided artificial sweeteners because they are "unhealthy" so that was a bad choice huh !
Today, my mouth is really painful, I have 3 mouth ulcers - one on the side of my tongue where a tooth keeps catching it, inside my cheeks both feel inflamed and have an ulcer in each one, and my inner lip is smarting, I guess I ate something that my mouth reacted against but I'm mystified, anyone else experience that ?

I use erythritol - it doesn't leave a chemical after-tang, and it isn't as processed as some of them.
Xylitol has a great flavour, but I don't use it because it is very poisonous to dogs, and we have 2 mutts.
Some people love stevia, but I find it leaves a bitter aftertaste.
Can't really tell you about the others, because I avoid them like the plague! They either give me a headache, insomnia, or make me thirsty, so I'm guessing they don't do me any favours. lol.

Re the mouth unlcers, I get them when I am either run down, or have eaten too many nuts. I always used to get them around Xmas - the nuts and the parties, you see.

You may have a different trigger, but maybe look at what you have recently changed in your diet?

I, know what you mean about the terribly bitter taste of Stevia, but I find I don't notice it in lemonade I make myself. When making things like ice-cream, I try hard to cut down how sweet I make things, so that by now, I don't use much of the sweetener as compared with what I would have wanted to use 3 years ago, at diagnosis. Too much artificial sweetener can give digestive problems that resemble IBS. Good luck.

Take one day at a time with the goal of reducing your carbs so you get to the point where your not at risk and that the occasional treat is something you can have without issue

I've been quiet as i have been away - 2 nights visiting friends, then a conference in a hotel. I am pleased with myself because I stuck to the diet really well, and i also walked a lot having just bought a fitbit. in the last 7 days have walked 42 km (26 miles) which sounds unbelievable !!!! i'm being weighed at GP on Weds, so am hoping i will have lost weight, if I haven't then there is no justice in the world as i have stuck to 800 calories most days, rising to 1100 twice but no carbs or sugar. I just had meat and cheese as available, and did without the carbs.

One thing that was particularly nice and felt incredibly luxurious was an amuse bouche in a restaurant that suddenly appeared, a teeny portion in a tiny coffee cup and it was scrumptious: Cauliflower and blue cheese foam, ie like the froth on top of cappucino but savoury, with a nice garnish of chopped chives and toasted pumpkin seeds. It was heavenly and i want to see if i can make it at some point using the foam maker from the coffee machine

If I have the need to use a sweetener which is not often but maybe a small sprinkle on frozen fruit then it is Stevia and I don't find it has a bitter taste but it has to be the pure Stevia as some that say they are Stevia have other sweetener added to them

I make my own ice cream tub of whipping cream, tub of clotted cream vanilla extract and raspberries with a tiny bit of honey. Freeze and enjoy, bit harder than normal ice cream but 119 less teaspoons of sugar.

This discussion about self harming with carbs - this can be blocked with a veg feast.
Always keep veg cooked lightly in the fridge to make a stir-fry or nibbling on. Reassure yourself it isn't you addicted but the carb cravings.
Carbs = more carbs. High bgs yearn for higher bgs. Block them in their tracks. Carbs are evil for diabetics. I don't care what anyone says.
There are carbs peaking in our food, from all angles so aliminate the heavy ones and the light ones will do less damage.
Just remember 'you're worth it' when debating about those better meat quality sausages should be bought. Salmon and other expensive foods are farmed for people like you. People who need their nutrients and healing properties.
Processed food is for those none delicate paletes. Become chosey and particular about what goes in your mouth. You have full opportunity to make a difference in hoe long you will live. Recklessness causes mistakes, mistakes which are deadly, for some.
Let others be reckless. You want to live longer. You may be recognised as the longest living diabetic or similiar. The world is your oyster!
I find some self harmers have been told they're worthless. You definitely are important enough to keep healthy and have great longevity as your right! Diabetics are not worthless, especially at the moment. Everyone of us are pioneers!

It has been a year of enjoyable sauteed mushrooms, cheese, roast pork belly, pork chops, lamb shank, sizzling steaks, korean bbq beef, grilled fish, roasted almond, cashew nuts, macadamia nuts and dark chocolates.

Low carb = gastronomic experience for me :D

And rewarded with decent HbA1c of 5.5%

Visit your local hospital surgical ward and see how many people are in for diabetes related amputations.
I disagree on this. Scaring people on possible ill effects with graphic display of them normally doesn't work, simply because one knows very well rationally the possible outcomes but this does not change their behaviours.

Coffin nail it's an english slang for cigarettes, isn't it?

Maybe for some people works, but for some other people doesn't.

I think also that the "rational path" works well for positive and happy people. If one is depressed or in a bad mood, the bad behaviour is triggered by "all is going wrong, what the hell" attitude one in a bas mood has.

I think the bes course of thing to do is, in this case, is to start researching good and tasty healthy foods especially low carb foods and recipes.
I actually enjoy making a big mixed salad for dinner!
Lettuce, tomatoes, eggs, squashes, cucumbers, fennels, cabbages, grilled chicken,onions,feta,...

I was a binge eater too and my T2 diagnosis was the colossal kick up the bum I needed.

I'm also in a similar situation re having good chefs at work - I work in a conference and exhibitions venue and Leith's do the catering. Yesterday, the first time since my diagnosis a few weeks ago, I had one biscuit and ended up eating it very slowly because it tasted so sweet and yes, it was yummy and yes, it did spike my blood sugar, but it was a good exercise to try. Before diagnosis, I would have been sneaking up to that plate of biscuits (with a lot of shame) at frequent intervals until I'd devoured the lot, averaging two bi.

Now I know I can't do that any more, but I feel fine about it because on my normally low-carb, high-fat diet, I'm eating loads of things that I adore, feel satisfied and I'm losing weight (all the walking probably helps too).

And I love all these ice-cream recipes, and the amuse-bouche!
